Looking for a simple recipe full of color and nutrients? Try this delicious and healthy dish this Valentine's Day for a meal that will impress and nourish:
Grilled Salmon with Roasted Veggies Ingredients: - 4 salmon filets
- 1 large sweet (or a few red) potato(es), peeled and chopped into bite-sized pieces
- 1 large red bell pepper, chopped
- 1 large red onion, chopped
- 1 head of broccoli, chopped
- 1 zucchini, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs to taste (thyme, basil, rosemary)
Instructions: - Preheat oven or grill to 400°F
- In a large bowl, toss together the potatoes, bell pepper, onion, zucchini, broccoli, olive oil, salt, pepper, and herbs
- Spread the vegetables evenly on a baking sheet and place them in the oven to roast for 20-25 minutes (use parchment paper for easy clean up)
- While the vegetables are roasting, season the salmon with salt, pepper, and herbs
- Place the salmon filets on the grill or in a grill pan and cook for 4-5 minutes on each side until fully cooked
