- 1 scoop Primal Collagen
- ⅔ cup coconut milk (or milk of choice)
- 1-2 tbsp raw cacao
- 1 tsp pure vanilla extract
- 1 tsp chia seeds
- ½ pinch sea salt
- 7-10 soft dates
- Optional: Toppings such as chopped nuts, fresh berries, cacao nibs, or coconut flakes
| | Instructions: 1. Pour the dates into a food processor and blend until smooth. (You can add a few tablespoons of water to help blend the dates if they aren't soft enough.) 2. Slice the avocados in half, remove the pits, and scoop the flesh from the skins into the food processor. Blend on high until perfectly smooth and creamy, scraping down the sides of the bowl if necessary. This may take a couple of minutes. 3. Add the remaining ingredients to the food processor and blend until well combined. You should blend until the consistency is smooth. Again, make sure you scrape down the sides of the bowl if you need to. 4. Taste and add another date if it's not quite sweet enough (you can also add a sweetener of your choice like honey or maple syrup). If the pudding is too thick, you can also add a little more coconut milk. 5. Transfer pudding to small bowls or ramekins and refrigerate until chilled. 6.
