Why is growth so important? Well, think about it this way: just like the flowers blooming in your garden and the trees reaching for the sky, we too have the capacity to grow and flourish. I moved about five hours from my hometown a couple of years ago… | | HOMEMADE GAZPACHO WITH COLLAGEN | | Ingredients: - 4 large ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Optional: 1 scoop Primal Collagen
- Optional: fresh herbs such as basil or cilantro for garnish
| | Directions: 1. In a blender or food processor, combine the chopped tomatoes, cucumber, bell pepper, red onion, garlic and Primal Collagen. 2. Blend until smooth, adding a splash of water if needed to reach your desired consistency. 3. Transfer the blended mixture to a large bowl and stir in the olive oil and red wine vinegar. 4. Season the gazpacho with salt and pepper to taste, adjusting as needed. 5. Cover the bowl and refrigerate the gazpacho for at least 1 hour to allow the flavors to meld and chill. 6. Before serving, taste the gazpacho and adjust the seasoning if necessary. 7.
