This recipe puts a spin on classic scrambled eggs with the addition of turmeric. Turmeric contains a compound called curcumin which is thought to be responsible for its studied benefits. Adding black pepper to turmeric-infused dishes is thought to help the body use turmeric more efficiently. | | Ingredients: - 3 free-range or organic eggs
- 1 tsp grated turmeric ½ garlic clove, finely chopped
- 1 tbsp coconut oil, ghee, or extra-virgin olive oil
- 2 tablespoons organic coconut milk (or milk of choice)
- Pinch sea salt
- Pinch black pepper 100 g spinach leaves
- Optional: Slices of toasted sourdough for serving.
Instructions: - Whisk the eggs with the coconut milk, turmeric, salt, and black pepper.
- Add the oil or ghee in a non-stick pan over a medium heat. Sauté the garlic, add the spinach leaves and wilt for a few mins – add a splash of water if they stick.
- Pour the egg mixture into the pan with the spinach and stir continuously for 5-8 mins until the scrambled eggs are at the desired consistency. Taste and season accordingly. Serve on slices of toasted sourdough.
Additional Tips: - Replace the eggs with 300 g of tofu for a vegan version. Tofu contains both protein and calcium.
- Turn this into a heartier meal by adding more veggies to your scramble and serving with half a baked sweet potato or rolled up into a burrito.
